Potato Salad - my own version of it that is.


When you find yourself craving for something very comforting, think potato salad comes to mind. Made these when I have some baby potatoes sitting in for a couple of weeks already. It is just a matter of boiling the potatoes, browning the bacon, chopping the onions and bell pepper, and mixing everything together and enjoy! Easy!
My own version of potato salad:
Baby potatoes
Bacon
Onions
Cottage cheese
Sour cream
Green bell pepper
Salt and pepper
Chili powder (optional

Spain on the Road Again


One of my favorite shows in the Asian Food Channel. This show has the perfect cast, Gwyneth Paltrow, Mario Batali, Mark Bittman and Claudia Bassols. 
Now I want to go tour Spain and eat genuine tapas!

An Inspiration To Me: 80 Breakfasts


When i saw this blog, 80breakfasts.blogspot.com I immediately fell in love with it. The first post is something I have been craving for and looking for here in Manila - lentils. Yes lentils! Oh well, let’s just make it a whole new post for me next time.
This blog, 80 Breakfasts by ChichaJo,became an instant inspiration to me. I immediately related to the her recipes and posts. And oh, how I admire her beautifully photographed dishes! The recipes are simple and yes, comforting to the soul. (This is my personal belief, since I am attached to the love of food and dining that much as well) This is the kind of blog and posts I want to achieve in the future. Not to mention, cook also wonderful dishes to my family that will translate as love. 
I will keep cooking and writing! 

Angel Hair with Bacon and Pechay Baguio cooked in Olive Oil

A quick experiment for my lunch “baon”. I don’t usually have the exact measurements because I cook for my individual taste. If you want to re-create, below are the ingredients for this recipe and the instructions.

Ingredients:
  • angel hair pasta (any brand will do, and amount depending on how much you need to eat)
  • olive oil
  • bacon (will depend on how much you want in your dish)
  • 1 head pechay Baguio
  • garlic
  • salt and pepper to taste
  • Italian seasoning
  • crushed chili (optional)
Instructions:
  1. Angel Hair Pasta - cook it according to package directions. Usually the angel hair pasta, will cook in 2 minutes since it is much thinner than linguine or spaghetti pasta. You can also try other variations of pasta or whole meal types of pasta if you want it a bit healthier. Make sure you drain the pasta water, once done.
  2. In a separate non-stick pan, heat a bit of olive oil (remember that you will use bacon and oil will come out while cooking it, so use just a little at first)
  3. Add garlic and bacon. I do this so that the garlic will not burn. Brown the bacon slightly.
  4. Add in the pechay Baguio and cook for atleast 2 minutes so as not to overcook the vegetable. 
  5. Put in salt and pepper to taste. Mix in a dash of Italian seasoning.
  6. Mix in the pasta, put a little of olive oil if you feel that the dish is getting dry. Make sure you mix everything well then serve.
You can use this recipe and measure the ingredients according to how many people you intend to feed. =)

Experiments in the Kitchen

I love to cook, that is when I have the time and energy and of course the inspiration to do so. It’s a phase for most of the time, cooking that is. I usually make time to cook my baon to take to the office for lunch, when I’m tight with my lunch money or I have a certain craving for something or, for the most part, I am trying to diet and eat healthy.


The photos in this entry are just some of the experiments that I did before. If I decide to cook in the morning, what I would normally do is just raiding the fridge or pantry for whatever is available in there and then coming up with something. Pasta, wraps and sandwiches are the most easy to experiment with since you can actually mix it with anything. Literally, from seafood to pork to vegetables. 
I take inspiration from the many cooking and lifestyle shows that I watch on a daily basis. Also, since I consider myself a foodie, when I taste something that I loved in a restaurant that we just ate in, I try to do it as well. Like that Bacon Asparagus that I love in Teriyaki Boy. 





Cooking is comforting for me. Though labor is required - the prepping, the actual cooking, the tasting, and the presentation, it gives me bliss at the end of a sweat-inducing cooking session. Why, because at the end of it, I can enjoy and appreciate something that I know I did by myself and in a small way, exercise the little creativity it is I have in me. But I think, the most rewarding part of it, is actually having people enjoy eating what you cook for them.
I hope to have more sweat-inducing cooking sessions in the future!
